I’m a long-time plant-based eater with over 24 years of experience.

My husband and I both eat a whole foods plant-based vegan diet and are currently raising our son on nutrient-rich plant-based food.

I’m science-obsessed and I use my degrees in biology and environmental science to critically assess information.

How Did I Get Here?

Before my pregnancy, I was a long-time vegetarian. I had wanted to change over to a full-time vegan but kept failing.

Once I became pregnant, I had bad morning sickness and an extreme aversion to all things dairy.

I took this opportunity to go completely vegan and haven’t looked back since.

After becoming a mom, it was difficult to find information about raising your child on a plant-based diet. I also found that most of the information was geared towards individuals and not families.

Here at Plant Prosperous, I’m sharing my own journey raising my son in the hopes that it can help other moms wanting to have a vegan plant-based family.

Why A Plant-Based Vegan Diet?

My family is thriving on this diet. My husband and I have more energy and have been sick less frequently.

Instead of feeling sluggish and wanting to nap after a meal, we feel energized.

It’s also a great way to save money on groceries. Dried beans, rice, and grains are a lot less expensive than meat and cheese.

Going plant-based saves me time in the kitchen too! Most of my meals are one-pot recipes I can make in a pressure cooker, slow cooker, or stovetop so I can spend more time with my family.

Aren’t You Worried About Raising Your Child Vegan?

This is a common question I get when people find out our child is vegan and following our family’s way of plant-based eating.

The answer is no, I’m not worried. He frequently chows down lentil curries, chickpea pasta, and green smoothies.

He eats a wider variety of foods than many adults I know!

As far as his growth goes, he’s been in the 90th percentile for height and 100th percentile for weight since birth.

I’ve always taken nutrition very seriously and closely follow the recommendations from my family’s doctors when it comes to vitamin and mineral needs.

My son’s pediatrician has tested his blood values and all have come back great and healthy.

Medical & Nutrition Note

When following a vegan or plant-based diet, there are some vitamins that MUST be supplemented in order to stay healthy.

I recommend finding a doctor or nutritionist that will work with your family’s diet in order to make sure you aren’t missing any critical nutrients.
